Ingredients
- 240g “soft” Rochefort Butter
- 2 rolls puff pastry
- 200g sugar
- 240g ground almonds
- 2 eggs
- 1 egg yolk
Method
- Cream the butter and sugar, add the ground almonds and the whole egg.
- Line a floured pie dish with one of the rolls of puff pastry.
- Brush the edge of the pastry with egg yolk.
- Transfer the frangipane to the middle of the dish and hide a charm in the mixture.
- Cover with the second roll of pastry, making sure the edges are sealed.
- Glaze with egg yolk and bake at 180°C (gas mark 6) for 20 minutes.
